Ginger and Soy Steamed Oysters

Ingredients

12 opened oysters
1 tablespoon finely julienne ginger
2 tablespoon finely julienne spring onion
2 tablespoon thin dark Soya sauce
1 tablespoon sweet Soya sauce
1 tablespoon sesame oil
1 tablespoon maggi seasoning
1 tablespoon oyster sauce
1 tablespoon sugar
4 tablespoon good quality fish stock
5 tablespoon hot oil

Method

  • Gently heat all the sauces including the fish stock – set aside
  • Place ginger evenly over the oysters and grill under salamander (over head grill) until oyster is three quarters cooked
  • Spread spring onion evenly over the oysters
  • Take your hot oil and carefully splash over the onion
  • Finish by placing the soy dressing over the oysters
  • Eat immediately

Please Note: oil must be extremely hot, almost smoking, for this dish to work
